Easy Slow Cooker Supper

Pineapple Chicken

The doors to this "infimary" are closing. I am packing my car, ready to head back to the farm. I'm praying that everyone here will stay well. For a few days at least. And fingers crossed that my sniffly nose is only allergy related and I haven't caught something here.

I thought before I get in the car for the three hour drive to the farm, I would share one of the easy recipes that got us through this week. No one felt like cooking but we still needed supper. This is a good recipe to save for that kind of day. It's only four ingredients in the slow cooker. Can't get much easier.

The teriyaki sauce you buy will make a difference in the final result, so pick one you like. Once we used one that was too salty. From now on, I'll stick with one of my usual brands.

PINEAPPLE CHICKEN

1 package boneless, skinless chicken breasts (3 breasts, about 2 lbs.)
1 red bell pepper, cut in a large dice
15-20 oz. jar teriyaki sauce (I used Archer Farms Teriyaki Grilling Sauce)
20-oz. can pineapple tidbits, drained

Cut chicken into large chunks. (I cut each breast into 3 strips lengthwise, then into large chunks)
Add chicken pieces and peppers to slow cooker. (I used a 3-1/2 qt. size.)
Pour sauce over chicken and stir.
Cook on LOW for 6-7 hours.
Add pineapple tidbits during last 20-30 minutes of cooking time.

  1. You're a good grammy nurse! I hope your sniffly nose is behaving. Your recipe sounds delicious...and easy. I checked to see if my pineapples had a flip top for easy opening. They do. Yeah! I can't do my can opener yet. (That's because I've used the most basic hand-held kind my whole life.) Question for you...out of curiosity. How often do you make a grocery run? I'm conservatine on runs, but I pass a store on my way the and from work.

    1. I use a handheld can opener, too. Never thought about the "one handed" problem. I shop about once a week. Sometimes less. But might make a quick trip if I'm out of something. It's a 13-mile round trip to the closest store for me. And it's not my favorite one!

    2. Yes, I didn't think about my can opener until a week ago. :-/ Thanks for the beef link. I'm going out on a limb with.........pork! I could make 6 1/2 trips to the store to your one! But...sometimes a good drive is cheery!

    3. Well, why have I never thought about pork in this recipe? I'm learning that the cooking time is different for the different meats. The newer slow cookers are hotter than the old ones and I have overcooked meats a couple of times.

    2. Thick cut pork chops on sale, butterflied! Will do it again. Would try a tenderloin, too..and then chicken, of course! It's delish!
